The Process:
To decaffeinate this coffee, cane sugar is used – a process also known as natural decaffeination. It is a natural, clean and environmentally friendly technique that utilises ethyl acetate (EA). This is a compound derived from the fermentation of sugarcane molasses, acting as a natural solvent to extract the caffeine. The process begins with specialised fermentation stages to bring out unique flavours. Caffeine extraction takes place in circular vessels filled with a mixture of water and ethyl acetate, reducing caffeine levels to 0.1 %. The result is a smooth, flavourful and very pleasant coffee. This process involves steaming the green coffee beans to open their pores, repeatedly immersing them in a solution of ethyl acetate so that it binds to the caffeine and extracts it, and finally subjecting them to a second steaming treatment to remove any residual ethyl acetate before drying the beans.
